Split Second Cookies are one of my favorite cookies to make every Christmas. I am a big fan of thumbprint cookies, but these definitely take the cake [or cookie!].
I usually send these to my dad in a cookie tin. It's really fun because each log (see recipe) I make with a different jam. You can never have too many options!
The best jams to use are apricot and blackberry; blackberry is the ultimate jam. The cookie itself is a soft and flakey short bread... these cookies are too perfect to pass up!
